This week, we're starting off our celebration of meat-free meals with recipes submitted by Kelsey Morgan, who blogs about food at An Apple A Day.
The “part-time cook and full-time teacher” sent recipes for seven of her favorite meatless dishes. We could add a vegetarian option to our diets each day of the week until our next Meatless Monday!
“I've been doing Meatless Mondays for about 18 months now and am having so much fun learning how to create balanced, healthy, tasty meals without meat,” Morgan wrote in an email to Patch. ”I've added a few of my favorite links here and attached the pictures. I hope you'll find some of them worth posting during Vegetarian Awareness Month!”
